October 2008: Broccoli Chicken Divan

While it wasn’t creative or very awe inspiring, it was tasty and handy for a quick fix. As a bonus, my husband said it was not only delicious, but the best casserole he’s ever had. 
November 2008: Chicken Corn Chowder with Thyme

This stuff felt like it took forever to make. Lots of prep work and lots of waiting around. Thankfully it turned out decent, though I’ll probably make changes next time.
(Since I technically did that recipe around Oct 31st, I’m adding a bonus one!)

Granted, I didn’t add the pepperoni on top, but it was still delicious. This recipe was really quick and easy, but totally filling. I was stuffed.
December 2008: Sausage & Lentil Soup

The goal here was to make a copy cat version of the Carrabba’s recipe. I probably could have cooked the lentils about 15 mins more, (mind you I’ve never cooked lentils before), but it was still very tasty and the flavor was dead on. Daniel kept saying it was one “spicy meatball.” ![]()
